A LITTLE NEWS FROM ME & THE BEES
One last taste of Tetbury.
I’m leaving Tetbury in the next few weeks, and my bees are coming with me. This is the last batch of local Tetbury honey I’ll have.
But don’t worry—honey keeps for a long time when stored properly. Pick up a few extra jars and keep a little Tetbury sweetness in your cupboard.

THE BEEKEEPER BEHIND YOUR JAR
Hello, I’m Scotty.
I keep bees in gardens in and around Tetbury. This honey comes from my own hives. I spin the honey from the frames, sieve it, jar it and let you eat it.

the honey.
I spin the honey from the frames, pass it through a sieve, then leave it to settle so air bubbles can rise before jarring it.

The bees choose
the flowers.
Every harvest has its own character, shaped by the flowers around Tetbury, the weather and wherever my bees choose to forage. The flavour can change from season to season—that’s part of the pleasure of garden honey.

Email ScottyWhere should I keep my honey?
Keep your honey at room temperature, with the lid closed. A kitchen cupboard is ideal. There’s no need to put it in the fridge.
Why has my honey gone grainy or set?
Honey naturally crystallises over time. It may become grainy or set—that’s a normal change in texture, and you can enjoy it just as it is.
How can I make it runny again?
Gently warm the jar in a bowl of warm water, keeping water out of the honey. Take your time and avoid boiling water.
Do not give honey to babies under 12 months.
